Crockpot Hot Chocolate

1 1/2 cups heavy whipping cream
14oz can sweeten condensed milk
6 cups milk
1 tsp vanilla
2 cups chocolate chips (I've used milk chocolate and semi sweet..both are great)

Add all the ingredients to the crockpot and stir.  Cover the crockpot and cook on low for 2 hours, stirring occasionally.  It's ready when the chocolate chips are melted and it's hot enough for your liking.  Stir before serving.

Beef and Tater Bake

1.5lbs ground beef
1 cup bread crumbs
1 egg, beaten
1/2 cup onion, diced
1/3 cup ketchup
1/2 teaspoon salt
1/8 teaspoon pepper

Combine all ingredients, pat into a 8 inch square pan.  Bake at 350 for 30 minutes; drain excess fat.

Combine 3 cups of prepared mashed potatoes with 3 cups shredded cheese.  Spread over meat mixture.  Top with 1/4 cup shredded cheese.  Bake for 20 minutes or until cheese is melted.

Broccoli Cheese Soup 2

4 cups water
2 carrots
2-4 large potatoes
onion to taste
bag frozen broccoli/cauliflower mix
2 cans cream of chicken soup
Velvetta or cheddar cheese

Combine first 5 ingredients and cook until vegetables are soft.  Mash with potato masher.  Add cream of chicken soup and shredded Velvetta or cheddar cheese to taste.  Cook until hot.

**Can be altered by making your own cream of chicken soup

Zuppa Toscana Soup

3 links of hot Italian Sausage 
3/4 cup chopped onions 
1 slice bacon, diced 
1 1/4 tsp. minced garlic 
1 can or 14 1/2 oz. chicken broth 
2 cups of water 
2 medium potatoes, sliced 
2 cups thinly sliced kale or spinach 
1/3 cup heavy whipping cream 




Take casing off of sausage, scramble sausage in greased frying pan until done.  Put sausage onto paper towels to soak up excess grease 
Place onions and bacon into greased pot and cook over medium heat for 3-4 minutes.  Stir in minced garlic and cook 1 minute.  Add chicken broth, water, & potatoes.  Bring to a boil, cover, reduce heat, and simmer for 25 minutes.  Stir in kale, heavy whipping cream, & sausage.  Cook 5 minutes. 


Makes 6 servings.

Parmesan Noodle Skillet

2 cups dried medium noodles
12 oz lean ground beef
1 cup purchased light Alfredo sauce
1 14oz can Del Monte whole green beans, drained
1/4 cup red sweet pepper, chopped


Cook noodles according to package directions; drain.  Meanwhile, cook beef in large skillet until brown; drain. Stir in noodles, sauce and 2 tablespoons water. Heat through.  Stir in beans and sweet pepper; heat through. Sprinkle with grated Parmesan cheese, if desired.

Apple Honey Stuffed Chicken Breast

1 tbs. butter
1/2 cup diced onion
1 Granny Smith apple, peeled and shredded
1 tbs. plain bread crumbs
1 tbs. honey
1/4 tsp. pumpkin-pie spice
1/4 tsp. salt
1/8 tsp. pepper
Pinch of thyme
4 bone-in chicken-breast halves


Heat oven to 400F. Line baking pan with foil. In medium skillet, melt butter over medium heat. Add onion and cook until soft, about 5 minutes. Stir in apple, bread crumbs, honey, pumpkin-pie spice, salt, pepper, and thyme. Cook 2 minutes more. Remove from heat. 
Pull skin up (but not off) chicken breasts. Season chicken with salt and pepper. Divide apple mixture among chicken pieces, tucking stuffing under skin. Told skin back over apple filling and breasts and secure in place with a toothpick.
Place in foil-lined pan, and bake 40 minutes. Let rest 10 minutes. Peal breast meat away from bone and slice.

White Chili with Chicken Recipe 2




1tablespoon vegetable oil
1large onion, chopped (1 cup)
2cloves garlic, finely chopped
1lb boneless skinless chicken breasts, cut into bite-size pieces
3cans (14 oz each) chicken broth
2cans (15 oz each) cannellini beans, drained
2cans (4.5 oz each) Old El Paso® chopped green chiles, drained
1teaspoon dried oregano leaves
1/2teaspoon ground cumin
Dash ground red pepper (cayenne), if desired
1 1/2cups shredded Monterey Jack cheese (6 oz)
Chopped fresh cilantro, if desired


In 4-quart saucepan heat oil over medium-high heat until hot. Add onion, garlic and chicken; cook and stir until chicken is no longer pink.
Stir in remaining ingredients except cheese and cilantro. Heat to boiling. Reduce heat to low; simmer 10 to 15 minutes to blend flavors, stirring occasionally.
To serve, spoon chili into soup bowls. Top each serving with cheese and cilantro.

Chicken Dorito Casserole

1 bag Doritos
1 can cream of chicken soup
1 can cream of mushroom soup
1 whole chicken, cooked, skinned, deboned and chopped
1 can Rotel tomatoes, drained
Salt and pepper
1 bag shredded cheddar cheese
1 bag shredded sharp cheddar cheese
Nonstick cooking spray




In a large mixing bowl, add chicken, soups, Rotel tomatoes, and a sprinkle of salt and pepper; stir to mix ingredients. Mix in cheddar cheese and HALF of the sharp cheese; crumble HALF of the Doritos and mix crumbs into mixture. Pour mixture into baking dish that has been sprayed with nonstick cooking spray. Put in a preheated oven at 375 degrees for 20-30 minutes or until hot. Sprinkle remainder of sharp cheese on top and take remaining Doritos and place on top of cheese. Place back in oven about 5 minutes. Make sure to watch as oven tempatures vary and you don't want to scorch your chips; bake until cheese slightly melts.

Black Bean and Beef Tostadas

1/2lb ground beef
1 medium onion, chopped
1 10oz can diced tomatoes with green chilies, undrained
1 15oz black beans, rinsed and drained
6 tostada shells
1 cup shredded lettuce
2/3 cup chopped tomato
3/4 cup shredded colby monterey jack cheese


Cook beef and onion in a 10in skillet over medium heat for 8-10 minutes, stirring occasionally, until beef is brown; drain.  Stir in tomatoes.  Heat to boiling; reduce heat to low.  Simmer uncovered about 10 minutes or until liquid has evaporated.  Stir in beans.  Heat tostada shells as directed or package.  Top tostada shells with bean mixture, lettuce, tomato and cheese.

Easy Turkey Cacciatore

4 uncooked turkey breast slices, 1/4in thick, 1lb
1/4 cup all-purpose flour
1/4 tsp pepper
2 tbsp olive or vegetable oil
1 small onion, sliced
1 small green bell pepper, cut into 1/4in strips
1 25oz jar spaghetti sauce
1 8oz pkg refrigerated fettuccine
1/2 cup shredded mozzarella cheese

Coat turkey with flour; sprinkle with pepper.  Heat oil in 12in skillet over medium-high heat.  Cook turkey, onion and bell pepper in oil 10-12 minutes, turning once, until turkey is no longer pink in center.  Sir in spaghetti sauce. Cook about 5 minutes or until sauce is hot.  Cook and drain fettuccine as directed on package.  Place fettuccine on 4 serving plates, top with turkey mixture.  Sprinkle with cheese.
